Peppers can be harvested in the immature green stage or when fully ripe. Look for firm peppers with shiny, unblemished skins, green stems, and are heavy for their size.
Store peppers in the refrigerator 3-4 days. Peppers may be kept at room temperature if using within a day or 2.
