Vegetable Stir Fry

Who is ready for some delicious stir fry made with all sorts of vegetables from Iowa!

  • 1 lg. sweet onion, sliced
  • ½ red pepper, thinly sliced
  • ½ yellow pepper, thinly sliced
  • ½ orange or green pepper, thinly sliced
  • 1 med. yellow summer squash, chopped ¼ in thick
  • 1 med. zucchini, chopped ¼ in thick
  • 1 sm pkg. snow peas
  • 1/3 cup grated cheese (parmesan)
  • ½ cup shredded cheese of your choice
Featured Iowa Ingredients
  1. Place some oil in skillet and heat.  
  2. Add onion to skillet and fry until transparent.  
  3. Add bell peppers and fry for 30 seconds.  
  4. Add the rest of the vegetables; cook and stir until zucchini and squash are slightly crisp, but not mushy. 
  5. After they are cooked, sprinkle with cheeses.  
  6. Serve. Goes well with rice.
