Select turnips that are firm, heavy for their size, and free of nicks or bruises. Small to medium sized turnips will have the sweetest flavor and best texture. If greens are still attached, they should be crisp and fresh-looking.
Remove the greens before storing turnips. Store in a perforated plastic bag in the refrigerator for up to 5 months. You may want to wrap the turnips in a damp cloth or paper towel first.
