Potatoes should be firm and smooth, having few eyes, and blemish-free. They should not have sprouts, soft spots, or green coloring.
Store potatoes in a cool, dry place for 2 weeks. Cut out any green areas and trim any sprouts before using. New potatoes are smaller, with thinner skin and do not store as well. They should be refrigerated and used with 10 days. Do not store potatoes with apples or other fruits.
