Selection tips
Look for parsnips that are small to medium in size, firm, and free of spots. If tops are still attached, look for vibrant green color and fresh, not wilted leaves.
Storage tips
Remove greens before storing parsnips. Store unwashed parsnips in a plastic bag in the refrigerator for up to 2-3 weeks
