Emu meat is a dark, cherry red color.
Vacuum-packed fresh emu steaks and roasts can be kept in the refrigerator 4-6 days; ground emu can be kept in the refrigerator 1-3 days. Similarly packaged emu will keep in the freezer up to 6 months for ground emu and up to a year for steaks or roasts.
