Selection tips
When purchasing fresh duck, check that the skin is clean, odor-free, feather-free, and off-white.  Duck meat is darker than that of chicken or turkey. 
Storage tips
Store duck in a plastic bag or place package on plate to prevent leakage from contaminating other foods. Store in 40°F or below refrigerator for up to 3 days.
