Red Wine Bison Burgers

These delicious burgers highlight some of the unique properties of bison meat.

  • 1 cup red wine
  • 2 Tablespoons brown sugar
  • 1 large sprig fresh rosemary
  • 1 pound ground bison
  • ¼ cup diced red onion
  • ¼ cup grated swiss gruyere cheese blend, or gorgonzola cheese crumbles
  • 2 tablespoons crumbled cooked pork bacon (2-3 strips)
  • 1 garlic clove, minced
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices bison bacon
  • 3 buns or rolls

Directions
  1. In a saucepan bring wine, brown sugar, and rosemary to a boil over medium-high heat, stirring occasionally until liquid reduces to ½ cup, about 7 minutes. Remove rosemary and set aside to cool, reserving 2 tablespoons for serving.
  2. In a large bowl, add ground bison, onion, cheese, cooked and crumbled pork bacon, garlic, Worcestershire, salt, pepper, and 1 tablespoon of wine reduction. Mix until combined, form 3 patties.
  3. Grill burgers 5-7 minutes, flip, brush with wine sauce, and cook additional 5-7 minutes until desired doneness.
  4. Serve on rolls, drizzle with reserved wine reduction sauce, top with bison bacon, and additional cheese as desired.
