Ingredients
  • 1 lb purple potatoes
  • 1 C homemade mayonnaise
  • 1/2 C Cheddar
  • 1 T Cilantro
  • Fresh Lime Juice to taste
  • 1/2 T Garlic
  • 1/2 Tablespoon Onion Powder
  • Cayenne Powder to taste

Directions
  1. Combine ingredients excluding potatoes to make sauce.
  2. Steam or boil potatoes until they start to soften, then chill with ice.
  3. Cut potatoes in half or quarter depending on size.
  4. Ensure potatoes are dry and deep fry until crispy
  5. Toss in sauce.
