Ingredients

Carrot Cake

  • 2 cups sugar
  • 4 eggs
  • 1 ½ cups vegetable oil
  • 2 cups self-rising flour (or mix 1 tsp salt and 1 T baking powder with 2 cups all-purpose flour)
  • 1 ½ tsp baking soda
  • 2 tsp cinnamon
  • 2 cups grated carrots
  • Walnuts, chopped (if desired)

Cream Cheese Frosting:

  • ½ cup butter
  • 1 pound powdered sugar
  • 1 tsp vanilla
  • 8 oz. softened cream cheese

Directions
  1. Add sugar, eggs, and vegetable oil to large mixing bowl and beat well.  
  2. Add flour, baking soda, and cinnamon.  Mix well.  
  3. Fold in carrots and nuts.  
  4. Pour into greased 9 x 13-inch pan.  
  5. Bake at 350°F for 40 minutes, or until toothpick comes out clean.
  6. Mix frosting ingredients together and spread on cooled cake.
