Ingredients
- 8 frozen hash brown patties
- 4 cups shredded cheddar cheese
- 1 lb. (2 cups) diced fully cooked ham
- 1 green bell pepper, diced
- 7 eggs
- 1 cup milk
- ½ tsp salt
- ½ tsp ground mustard
- 1/8 tsp pepper
Directions
- Grease a 9 X 12 pan and lay the 8 patties on the bottom.
- Sprinkle ham, bell pepper, and cheese over the patties.
- Beat eggs, milk, and spices together and pour over meat and potatoes.
- Cover with foil and bake for 1 hour in a 350° F oven.
- Uncover and bake an additional 15 minutes.
- This may be made the night before and refrigerated or baked right away.
*May substitute cooked ground sausage for the diced ham and use diced red bell pepper.
