Ingredients
- 4 ears sweet corn, kernels cut from cob.
- 1 sweet bell pepper any color finely diced
- 1 red onion finely diced
- 3 cloves garlic minced
- Salt and Pepper
- 2 Tbsp. Beer, wine, or brandy
- 1 cup heavy cream
- Butter
- Half of a lemon

Directions
- Heat a large skillet over medium heat.
- Add butter and let foam.
- Add in peppers and onions and cook until translucent.
- Add in garlic and cook until fragrant, about 30 seconds.
- Add in corn, salt and pepper, and cook until warmed through.
- Deglaze your pan with the alcohol of choice and let it reduce completely.
- Add in heavy cream and bring to a simmer.
- Let the mixture simmer until the cream reduces by half and creates a luxurious sauce.
- Squeeze lemon and adjust seasoning with more salt and pepper if needed.
