Creamed Corn

This delicious creamed corn will add the perfect touch to your next dish. Serve with grilled fish or meat and a green vegetable.

Ingredients
  • 4 ears sweet corn, kernels cut from cob.
  • 1 sweet bell pepper any color finely diced
  • 1 red onion finely diced
  • 3 cloves garlic minced
  • Salt and Pepper
  • 2 Tbsp. Beer, wine, or brandy
  • 1 cup heavy cream
  • Butter
  • Half of a lemon

Directions
  1. Heat a large skillet over medium heat. 
  2. Add butter and let foam. 
  3. Add in peppers and onions and cook until translucent.
  4. Add in garlic and cook until fragrant, about 30 seconds. 
  5. Add in corn, salt and pepper, and cook until warmed through. 
  6. Deglaze your pan with the alcohol of choice and let it reduce completely. 
  7. Add in heavy cream and bring to a simmer. 
  8. Let the mixture simmer until the cream reduces by half and creates a luxurious sauce. 
  9. Squeeze lemon and adjust seasoning with more salt and pepper if needed.
